Bacon Wrapped Shrimp Skewers
Ingredients:
1 pound of bacon cut into thirds, then partially cooked. Cook in the oven for about 6 minutes at 400.
1 pound peeled and deveined shrinp, tails on.
1 pound partially cooked bacon
5-6 jalepenos cored, seeded and sliced into strips
Jack or Colby Jack cheese cut into strips
Preparation:
Split the shrimp down the middle, insert a piece of cheese and a piece of jalepeno. Sprinkle with BBQ rub and wrap in bacon.
Grill over direct heat for about two to three minutes per side until the shrimp turns white and the cheese is melted. Do not over cook or the shrimp will be dry and the cheese will melt out.
Brush with a touch of BBQ sauce before removing from the grill
